This simple, airy cake is super easy to make, using a minimal amount of ingredients. This is very quick to whip up and can be eaten plain, or topped with some chocolate frosting, or some whipped cream and fresh fruit.
1. Beat egg whites until foamy.
2. Gradually add sugar, beating until stiff.
3. Add yolks, matzoh meal and lemon juice and combine gently.
4. Bake in a nine-inch springform pan over medium-low heat for one hour. When done, invert to cool.
