Prepare the Garlic Aioli
1.
Mix together and add water just till it becomes a sauce you can easily drizzle over the pitas.
Prepare the Sweet Potato Fries
1. Preheat the oven to 375 degrees Fahrenheit.
2. Julienne the sweet potatoes using a julienne peeler or spiralizer.
3. Place onto a Gefen Parchment lined baking sheet and drizzle with olive oil. Toss to coat then spread out evenly. Bake uncovered for about 30-40 minutes giving them a toss once while baking to be sure it evenly bakes. Each oven is different therefore check often to be sure they donβt burn.
4. Once out of the oven shake on salt to taste.
Notes: Fries are best served fresh or spray again with oil before reheating uncovered to crisp up again.
