Diets A beautiful, colorful, easy-to-prepare white fish baked Mediterranean style and loaded with oregano, garlic, tomatoes, red onion, and olives.
1 and 1/2 pounds fish fillet like cod or halibut
1 teaspoon kosher salt, divided
1/4–1/2 teaspoon black pepper
juice of 1/2 lemon
8–10 ounces cherry tomatoes, halved
1/4 cup Gefen Green Olives, halved
1/4 cup Tuscanini Kalamata Olives, pitted and halved
3 tablespoons red onion, chopped
5 cloves garlic, chopped
1 teaspoon dried thyme
2 teaspoons dried oregano
3 teaspoons Gefen Olive Oil, plus additional for the pan
fresh thyme for garnish (optional)
Preheat oven to 425 degrees Fahrenheit.
Brush a baking dish with olive oil. Sprinkle top and bottom of fish with 3/4 teaspoon salt and pepper. Be generous with the salt. Place fish in baking dish and squeeze lemon over.
In a medium bowl, combine tomatoes, olives, red onion, garlic, thyme, and oregano. Add oil, remaining salt, and a pinch of pepper. Mix to combine.
Pour mixture over fish.
Bake for 15–20 minutes or until fish flakes easily.
