Mexican Street Corn Salad

Ingredients

Mexican Street Corn Salad

  • salt, to taste

  • pepper, to taste

  • 1 red pepper, diced

  • 1 jalapeño pepper, diced

  • 1 red onion, diced

  • 1/2 bunch fresh cilantro, cleaned and chopped

  • 1/4 cup parve Parmesan (recipe below)

Parve Parmesan

  • 3/4 cup cashews

  • 3 tablespoons nutritional yeast

  • 3/4 teaspoon salt

Directions

Prepare the Mexican Street Corn Salad

1.

Brush the corn with oil and grill for two minutes per side until charred. Set aside to cool.

In a large bowl, stir together the mayo, lime juice, garlic cube, cumin, smoked paprika, chili powder, and salt.

3.

Slice the corn off the cob and add to bowl along with red pepper, jalapeño pepper, red onion, cilantro and parve parmesan. Toss to combine. Top with a sprinkle of parve parmesan.

Prepare the Parve Parmesan

1.

Combine all ingredients in the bowl of a food processor fitted with the S blade. Process until the mixture resembles coarse sand.

Ask your Rabbi before using fresh corn like that- lots of times the corn is infested..
