This is the perfect filling soup for a cold winter’s evening.
1 tablespoon oil
1 onion, diced
2 teaspoons minced garlic or 2 cubes Gefen Frozen Garlic
1 cup frozen mixed vegetables
1 small zucchini, chopped
1 pound chicken cutlets, diced into small pieces
1 (15-ounce) can stewed tomatoes
3/4 cup ditalini (small tube) pasta
1 teaspoon salt
1/2 teaspoon oregano
6 cups Manischewitz Vegetable Broth
Heat oil in a large pot over high heat. Add onions and garlic, and sauté until soft, about five minutes.
Add frozen mixed vegetables, chopped zucchini, stewed tomatoes, chicken, pasta, salt, and oregano.
Add broth and bring to a boil. Cover, lower heat, and simmer for one and a half hours.
