Mocha Chocolate-Cheese Muffins

My friend has been requesting a recipe for mocha cheese muffins for quite some time. She tried many variations, but none came out just right. Never afraid to take on a challenge, I set out on a quest to develop perfection. I thought it would be a piece of cake (pardon the pun), but it proved to be a real challenge. Still, not wanting to go back on my word, I kept at it until I got it: the perfect mocha chocolate cheese muffin. Rochie, this one’s for you.

Ingredients

Batter

  • 1 and 3/4 cups flour

  • 1/2 cup sugar

  • 1/2 cup loosely packed dark brown sugar

  • 1 teaspoon Haddar Baking Powder

  • 1/2 teaspoon baking soda

  • 3/4 teaspoon salt

  • 1 tablespoon Gefen Cocoa Powder

  • 1/2 teaspoon cinnamon

  • 1 cup milk

  • 1 tablespoon vinegar

  • 2 eggs

  • 1/3 cup oil

  • 1 and 1/2 tablespoons coffee granules

  • 1 tablespoon hot water

  • 1 teaspoon Gefen Vanilla Extract

Chocolate-Cheese Filling

  • 1 ounce (30 grams) Elite Dark Chocolate, chopped and melted 

  • 4 ounces (115 grams) whipped cream cheese

  • 1/4 cup sugar

Topping

  • 1/3 cup flour

  • 1/4 cup sugar

  • 1/2 cup mini chocolate chips

  • 2 tablespoons oil

Directions

Make the Muffin Batter

1.

Whisk together flour, sugars, baking powder, baking soda, salt, cocoa powder, and cinnamon in a large bowl.

2.

Place milk and vinegar in a small bowl. Allow mixture to stand for two minutes.

3.

Add eggs and oil. Whisk together.

4.

Dissolve coffee granules in hot water. Add to milk mixture along with vanilla extract.

5.

Pour liquid ingredients into the dry ingredients. Whisk together until combined and smooth.

Prepare the Filling

1.

Melt the chocolate in the microwave at 15-second intervals, stirring well in between.

2.

Place all ingredients in a small bowl.

3.

Beat or whisk until smooth and combined.

Prepare the Filling

To Assemble

1.

Prepare 18 muffin liners in muffin tins.

2.

Place one tablespoon muffin batter in each liner. Then add one teaspoon chocolate-cheese filling. Top with another tablespoon muffin batter. Sprinkle with one teaspoon crumb topping.

3.

Bake for 22 minutes.

4.

Preheat the oven to 350 degrees Fahrenheit.

It just helps enhance the chocolate flavor but you can omit if you’d like.

the perfect scrumptious muffin that goes side by side with your morning coffee, or when you are just craving that delicious flavor in your mouth…. not hard to make and too good to resist!!!!

Rachel Mocha Chocolate-Cheese Muffins love love love this muffin. yields less then the amount listed but would def recommend ( for the crumbs, i substituted the oil for butter)
