Diets I love, love caprese salad. It’s extremely easy and quick to put together and always impresses. I took it up a notch here by making them into skewer appetizers. The only time-consuming part is assembling them. Problem solved! I gave them to my ten-year-old daughter to do. She had so much fun putting them together. Yields approx 20 small skewers

2 packages Tuscanini Crispy Breaded Mozzarella Sticks
1 pint cherry tomatoes, sliced in half lenthwise
1 bunch fresh basil
Bake the mozzarella sticks according to package directions. Let cool, then cut each mozzarella stick into thirds.
Place a tomato half, a piece of mozzarella stick, and then a folded basil leaf on a skewer. Repeat, making sure the tomato is on the bottom as a base.
Drizzle with balsamic reduction. Serve at room temperature.
