1. Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper.
2. Place mushrooms on baking sheet and toss with oil. Roast for 10 minutes.
3. In a small bowl, combine tomato sauce with brown sugar and vinegar.
4. Lay wraps on a flat surface. Spread sauce on wraps. Sprinkle cheese over sauce. Form a line of mushrooms near one edge of each wrap. Cover with parsley.
5. Roll up and place in a baking pan with the edge down.
6. Cover and bake for 20 minutes.
7. Uncover and slice each wrap in half widthwise. Bake for an additional 10–15 minutes, until cheese is bubbling.
