My sister Zisi loves reading all kinds of interesting cookbooks, and she has a great eye for picking out recipes that we just “need to try!” She found this one a few years ago and it’s been on our grilling rotation ever since!
1/2 cup Tuscanini Olive Oil
3 tablespoons Tuscanini Apple Cider Vinegar
2 tablespoons mayonnaise
2 tablespoons spicy brown mustard
1 tablespoon soy sauce
3 cubes Gefen Frozen Garlic
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
2 pounds chicken cutlets
Mix oil, vinegar, mayonnaise, mustard, soy sauce, garlic, salt and pepper in a large Ziploc bag. Add chicken cutlets and toss to coat. Marinate for at least 30 minutes.
Grill for three to four minutes per side, until just cooked through.
