Jumbo chocolate marshmallow cookies!? We’re here for the fun. Today, Esty shares the most dense and fudgy s’mores cookies that you’ll adore all year round… oh, and on Passover, too. Don’t even think of taking out that mixer – the batter comes together by hand in one single bowl. Watch how it comes together on Easy Does It.
1/3 cup oil
2 eggs
2/3 cup sugar
1/3 cup brown sugar
1 teaspoon vanilla
1/2 cup Gefen Cocoa
1 and 1/4 cups Gefen Potato Starch
1 teaspoon baking powder
pinch of salt
1/2 cup chocolate chips
1 cup mini marshmallows, plus more for decorating
2 kosher-for-Passover graham crackers, coarsely broken
Combine oil, eggs, sugars, and vanilla in a bowl. Add the cocoa, starch, baking powder and salt. Mix well. Stir in the chocolate chips and marshmallows.
Refrigerate overnight for best results or at least several hours to firm up.
When ready to bake, preheat your oven to 350 degrees Fahrenheit and prepare two parchment-lined baking sheets. Use a one-fourth-cup measuring cup to portion the batter, placing no more than five tall mounds of dough on each baking sheet, leaving room for them to spread. Add a few marshmallows and pieces of Graham crackers to the surface of each cookie, pressing into the batter slightly. Bake for 15 minutes.
Allow to cool on the parchment before removing.

where could I get kosher for Pesach gram crackers
There’s no such thing
During Pesach time you can find Kosher for Passover graham crackers, they may only be available around Pesach though.

Can i substitute the marshmallow and gram crackers for something else if yes what can I put in instead
Just wondering… if this recipe is gluten free then how are there Graham Crackers in them? are they a special type of graham crackers (they look regular to me and Esty W. doesn’t mention anything about using a Kosher for Passover version or omitting them for GF purposes…)
