These are like oatmeal cookies in the shape of a muffin! No yeast, no eggs, no sugar and low-fat for the allergic and health conscious.

Prepare the Muffins

Preheat oven to 450 degrees Fahrenheit.

Combine dry ingredients in a bowl. In a separate bowl, mix parve milk, oil, and honey.

Add liquid mixture to dry ingredients, stirring until well combined. Add raisins, nuts, and/or chocolate chips and stir again until well mixed.

Fill 12 muffin cups two-thirds full with batter (it will be thick).

Bake for 10 minutes.
You can spread cream cheese or peanut butter on cooled muffins for a really special treat.

I added 1/4 cup of sugar free applesauce and some liquid stevia. Also put in a handful of blueberries. They were absolutely delicious if you can't eat things like bobka and cinnamon rolls! They are really good with a cup of coffiee or tea. We do love them but they are not gourmet. -

I wanted to give these muffins a go, but once I started adding in the ingredients, something just seemed off. Theres only 1 tablespoon of honey for the entire recipe. I tried the batter before baking and it was disgusting. I added in 1/4 sugar, baked and still utterly inedible. These probably could have been great, but could be that the editor forgot to mention a few other ingredients. Bakers beware. -
