I love a good, quick, easy supper that has a little bit of everything. This dish is almost like a buffet in one meal.
1 and 1/2 to 2 pounds chicken cutlets, cubed
2 teaspoons salt
1 teaspoon Pereg Black Pepper
1/4 cup Tuscanini Olive Oil
3 cloves garlic, diced
2 teaspoons Glicks Soy Sauce
7 ounces deli-style olives
1 small red pepper, diced, or a few mini red peppers
1 small green zucchini, diced
1 small yellow zucchini, diced
1 small red onion, roughly diced
2 pounds baby potatoes, halved
In a large bowl, toss all ingredients together. Place on a baking sheet and bake at 400 degrees Fahrenheit for 60 to 90 minutes.
