Get your summer vibes with nectarines, cherries, yogurt, and crumb topping all in one.
2 tablespoons Heaven & Earth Coconut Oil
3 tablespoons Gefen Maple Syrup
1 large egg
1 teaspoon vanilla extract
2 cups Gefen Almond Flour
1/2 teaspoon fine salt
2 cups vanilla Greek yogurt
1 nectarine, chopped
1/2 cup red and white cherries, pitted and chopped
Preheat oven to 350 degrees Fahrenheit.
Mix coconut oil, maple syrup, egg, vanilla, almond flour, and salt until smooth. Divide into 6 cookies; roll each into a ball and flatten gently with your palm.
Bake for 25 minutes, then let cool completely.
Crush one cookie into crumbs to use as topping. Top remaining cookies with yogurt and fruit; finish with cookie crumbs.
