1. Preheat oven to 425 degrees Fahrenheit.
2. Using chopsticks on either side of the potato, slice horizontally through the potato to achieve a hasselback effect. Drizzle with a couple tablespoons olive oil, salt, and pepper and roast in the oven for 35 minutes.
3. Mix the parsley garlic lemon cubes with the remaining olive oil. Take potatoes out of the oven and brush the herb mix on top and into the potatoes. Roast for an additional 10 to 15 minutes, or until your desired doneness.
