Diets Easy enough to pull together quickly, this is a great choice for a Shavuos dessert that presents nicely and is absolutely scrumptious! Use purchased vanilla ice cream to make it even simpler.
1 cup (2 sticks) margarine
1 cup brown sugar
2/3 cup sugar
2 eggs
1 tablespoon vanilla
2 tablespoons Gefen Peanut Butter
1 and 1/2 tablespoons Gefen Cocoa
2 and 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
10 ounces (280 grams) Glicks Chocolate Chips
12 Oreo cookies, coarsely crushed
1/2 cup Gefen Peanut Butter
4 tablespoons Gefen Corn Syrup
1 teaspoon vanilla sugar
dash of salt
2 teaspoons oil
4 teaspoons water
vanilla ice cream
Preheat oven to 350°F (175°C).
In a large mixing bowl, combine margarine and sugars and beat until fluffy. Add eggs, vanilla, and peanut butter and continue to mix. Add cocoa, flour, salt, and baking soda and mix until combined. Add chocolate chips and chopped Oreos and mix until just evenly incorporated.
Form dough into large balls, and place on Gefen Parchment-lined baking sheets, flattening slightly. Make sure cookies have enough room to spread out a bit. Bake for 16 minutes.
To make the sauce: Combine first five ingredients in a small pot and heat, stirring until smooth. Add water and mix until incorporated.
Warm cookies and sauce before serving, and serve with vanilla ice cream.
