Who said dessert on Pesach has to be complicated, or that it can’t come together in just a few minutes? Esty Wolbe is here to prove otherwise with a stunning Pesach Lemon Curd Dessert Board that’s as fast as it is beautiful.

3 eggs
3/4 cup sugar
zest of 2 lemons (optional) plus 1/2 cup fresh lemon juice (3 to 4 lemons)
1/4 cup Tuscanini Sicilian Olive Oil
pinch of salt
Heaven & Earth Coconut Wafer Rolls, all flavors
fresh strawberries
ladyfinger cookies
fresh blueberries
short skewers
In a saucepan, whisk together all ingredients.
Set over medium low heat and simmer until thickened, about five to seven minutes, whisking constantly. You’ll know it’s ready when it coats the back of a spoon.
Strain the curd through a fine mesh sieve to remove any lumps, cover and refrigerate until ready to use.
Serve the lemon curd in a bowl in the center of a wooden board. Surround with cookies, fruit and marshmallows (anything you like that’s KFP). Enjoy the various flavor and texture combinations!
