Directions
1. Combine silan, pomegranate juice, garlic, parsley, mustard, oil, salt, and pepper. Pour marinade over chicken, making sure to coat all sides and under the skin.
2. Marinate for about an hour.
3. Roast at 475 degrees Fahrenheit for 20 minutes and then 375 degrees Fahrenheit for 25 minutes. Check for doneness with a meat thermometer; it should read 165 degrees Fahrenheit.

I make this chicken almost every Shabbos, but I use orange juice instead of pomegranate juice and it comes out delicious.

I saw in the comments that someone wrote she used this on a roast, so I made the recipe with both chicken and a roast to compare. While both were delicious, the vote here was definitely that it is better on a roast!

My entire family loved it. It’s delicious and I’ve never used silan or pomegranate juice. I will definitely be making it more this month.

Very good..gave only 4 stars because I think it could have had a more pronounced flavor. Next time I will add more of the ingredients for bolder flavor.
