Potato and Tri-Color Pepper Bake

Main ingredients

  • 8 red potatoes, washed and cut into large chunks (with skin on)

  • 1 red pepper, diced

  • 1 yellow pepper, diced

  • 1 green pepper, diced

  • 1 onion, sliced thinly

Directions

Prepare the Vegetables

Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).

Combine all ingredients in a 9×13-inch baking pan or oven-to-tableware. Bake for two hours, tossing occasionally.

Tips:

The longer this bakes, the more the flavor intensifies.
