This is a family classic from my mother’s archives. It’s so delicious and versatile, it makes appearances in our menus all year long.
8 red potatoes, washed and cut into large chunks (with skin on)
1 red pepper, diced
1 yellow pepper, diced
1 green pepper, diced
1 onion, sliced thinly
2 cloves garlic, crushed, or 2 cubes Gefen Frozen Garlic
1/2 cup Bartenura Olive Oil
3 tablespoons onion soup mix
salt, to taste
Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius).
Combine all ingredients in a 9×13-inch baking pan or oven-to-tableware. Bake for two hours, tossing occasionally.
