As the name implies, everything in this salad comes from a can. How easy can you get?! This is a great salad for those times when you haven’t gotten to the grocery in a while. Keep your pantry stocked and you can always enjoy a quick and easy canned salad!
1 jar Gefen Hearts of Palm, cut into 1-inch circles
1 can button mushrooms
1 can Haddar Baby Corn, cut into 1-inch pieces
1 can Glicks Chickpeas
optional: 1 fresh vegetable
4 tablespoons Kedem Red Wine Vinegar
2 tablespoons sugar substitute
2 tablespoons oil, such as Gefen Canola Oil
2 tablespoons water
salt, to taste
pepper, to taste
Mix all the marinade ingredients.
Rinse and drain the chickpeas. Drain the other cans.
Put all the ingredients into a large container. Add the marinade and mix well.
Feel free to add a fresh ingredient if you have one on hand; cherry tomatoes or red onions work well in this salad.
Refrigerate the salad to allow all the flavors to meld together.
