This refreshing palate cleanser can be used as an appetizer or dessert (or both!). The mix of sweet and sour with a hint of vanilla will tantalize your tastebuds. It can be prepared two to three hours before serving and kept in the fridge.
1 cup blueberries
2 mangos, diced
2 green apples, diced (unpeeled)
juice of 1/2 lime
1 teaspoon Gefen Maple Syrup
1/2 teaspoon Gefen Vanilla Extract
2 sprigs fresh mint, chopped
slivered almonds
granola [skip for Passover]
Place fruits in a bowl.
To prepare dressing, mix lime juice, maple syrup, and vanilla extract. Add mint. Whisk and pour over the fruit.
Mix salad and garnish with slivered almonds or granola when serving, if desired.
