Roasted Fries


Home fries, as these are often called, are a family favorite all year-round. For extra zing, you can experiment with other herbs and spices, such as garlic, parsley, pepper, paprika, tarragon, cayenne pepper, etc.


Prepare the Roasted Fries

1. Preheat oven to 450 degrees Fahrenheit.
2. Toss all of the ingredients in a medium bowl to coat potatoes.
3. Arrange potatoes on a cookie sheet, face up. Roast for 20 minutes; then reduce oven temperature to 400 degrees Fahrenheit.
4. Continue to roast until potato wedges are tender and golden, about 30 minutes more.
