1 cup brown rice
1 and 1/2 cups boiling water
4 pieces salmon
2 tablespoons olive oil
2 teaspoons salt
1/2 teaspoon black pepper
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons paprika
1/4 cup mayo
1 tablespoon hot sauce
1 tablespoon honey or brown sugar
1 tablespoon water to dilute the dressing (adjust as needed)
4 Persian cucumbers, chopped
4 scallions, chopped
1 cup shredded carrots
2 avocados, sliced
2 tablespoons sesame seeds
Preheat oven to 375 degrees Fahrenheit.
Place rinsed rice and boiling water in a baking dish. Cover tightly with foil.
Bake for 40 minutes, remove, fluff with a fork, and let sit for five to 10 minutes.
Drizzle the olive oil over the salmon.
Season the salmon with salt, pepper, garlic powder, onion powder, and paprika.
Massage the spices into the salmon really well.
Add the salmon to the oven that has the rice in it for 15 to 18 minutes or until the salmon reaches a doneness you like.
Mix the mayo, hot sauce, and honey or brown sugar.
Add the water slowly to get a pourable consistency.
Place the rice on the bottom of the bowl.
Add the cucumbers, shredded carrots, scallions, avocado, and pieces of salmon on top.
Sprinkle sesame seeds and mayo dressing on top.
Mix everything together if you want the delicious dressing in every bite!
