Diets This is definitely not your standard hummus! Bursting with flavor, this healthy green hummus will soon become a staple at Shabbos seudas and as a dip you reach for to enjoy with cut up veggies or crackers. It’s delicious!
1 packet from box of Manischewitz Hummus Mix
1/2 cup water
2 tablespoons Gefen Lite Mayonnaise or other reduced calorie mayonnaise
1/4 cup artichoke hearts marinated, diced
1/4 cup frozen chopped spinach, thawed, squeezed dry
5 teaspoons grated parmesan cheese
2 scallions, coarsely chopped
1/8 teaspoon Louisiana hot sauce
4 teaspoons diced pimiento
water
Place chick pea dip mix, water, mayonnaise, artichokes, spinach, cheese, scallions and hot sauce in a food processor. Process until very smooth. Remove and place in a bowl.
Finely dice the diced pimientos with a knife and stir into first mixture. Chill 15 minutes.
Use as a spread on TamTam Crackers or as a vegetable dip.
