1 small sweet potato, peeled and diced
5 ounces baby spinach
1 cup shredded red cabbage
1 carrot, julienned
2 peppers, finely diced
1/4 cup sliced almonds
Heaven and Earth Veggie Croutons (optional)
feta cheese (optional)
1/4 cup Gefen Olive Oil
1/2 cup Heaven and Earth Lemon Juice
2 tablespoons balsamic vinegar or any wine vinegar
1 clove garlic
1/2 teaspoon oregano
1/2 teaspoon salt
pinch of black pepper
1 teaspoon honey (optional)
Preheat oven to 425 degrees Fahrenheit. Add sweet potatoes to a greased baking sheet. Bake for 20 minutes.
Whisk together dressing ingredients in a large bowl. Add spinach and all salad ingredients, then toss together.
