Spinach Salad with Lemon Dressing

Ingredients

Spinach Salad

  • 1 small sweet potato, peeled and diced

  • 5 ounces baby spinach

  • 1 cup shredded red cabbage

  • 1 carrot, julienned

  • 2 peppers, finely diced

Lemon Dressing

  • 1/2 teaspoon salt

  • pinch of black pepper

  • 1 teaspoon honey (optional)

Directions

Prepare the Spinach Salad with Lemon Dressing

1.

Preheat oven to 425 degrees Fahrenheit. Add sweet potatoes to a greased baking sheet. Bake for 20 minutes.

Whisk together dressing ingredients in a large bowl. Add spinach and all salad ingredients, then toss together.
