Sweet and Sour Cabbage Soup

It’s all about moderation.   A “sweet”-and-sour soup like this does contain sugar. But look at the yield and the rest of the ingredients. A half-cup in a huge pot like this will yield only two teaspoons per bowl…and the other ingredients are almost calorie-free.

Ingredients

Main ingredients

  • 2 tablespoons olive oil

  • 1 large onion, diced

  • 2 cloves garlic, crushed

  • 2 medium zucchini, shredded

  • 2 bags shredded coleslaw mix

  • 10 cups water

  • 2 (15-ounce) cans Gefen Tomato Sauce

  • 3 tablespoons Heaven & Earth Ketchup

  • 1/2 cup vinegar (use gluten-free if needed)

  • 1/2 cup brown sugar, firmly packed

  • 2 tablespoons garlic powder

  • 2 tablespoons onion powder

  • 1 teaspoon salt

  • 1/2 teaspoon pepper

  • 1 tablespoon Gefen Cornstarch, dissolved in 3 tablespoons water

Directions

Prepare the Soup

1.

Heat oil in a large soup pot over medium heat. Add onion and sauté until soft. Add garlic, zucchini, and coleslaw mix. Cook until vegetables are soft, about 10 minutes.

2.

Add water, tomato sauce, ketchup, vinegar, brown sugar, and seasonings. Bring to a boil. Stir in cornstarch.

3.

Let simmer for one to one and a half hours.

coleslaw How big a bag of coleslaw is the recipe speaking about? 400 grams, 1 kilo? (I live in Israel)

A standard bag of coleslaw in the US is 8 oz.

Sour? Is there a strong sour taste that may make this not such a kid friendly soup

It all depends on your tastebuds, however it is not like a lemon sour. The sourness comes from the tomatoes and vinegar but there is brown sugar to balance it out. Hope this helps!

This wasn’t the best soup I’ve ever made.
It had a very distinct flavor, and will probably be either loved or disliked, so I’d give it a try only if the ingredients appeal to you.
Tomato paste and vinegar were the tastes that stood out most to me. It was pretty spicy, and the sweet taste the more tomatoes than anything. It was a sour cabbage soup more than a sweet and sour one. Word of warning: don’t cut the sugar, since it will be VERY hot if you do.
It was nice for a change, though I can’t say I’m going to make it again.

Was a hit with my family My husband and young kids loved this. It’s also healthy and different and all that makes this recipe a winner for me. It is a little hot (‘hot’ as in spicy) but that didn’t seem to matter to my family.
