This sweet and sour fish combines the best of both worlds; the brown sugar fills your sweet tooth and the vinegar, salt and pickling spice hits that sour spot. It’s also super versatile and goes well with salmon, carp or any white fish. Bonus that everything gets cooked together in one pot on the stove giving you more free time and less clean up. 10-12 slices salmon, white fish, or carp.
1 large onion
1 cup brown sugar
1 tablespoon water
3/4 cup vinegar
1 and 1/4 cups water
1 teaspoon salt
1 tablespoon pickling spice
Saute onion in brown sugar and one tablespoon of water over low heat for 10 minutes.
Add vinegar, water and salt, bring to a boil.
Place pickling spices in a small wrap ‘n boil bag and add to water.
Add fish, lower heat and simmer for 45 minutes.

Is it really 45 minutes cooking time? Forty-five minutes seems like a very long time for the fish to poach. Does anyone have any experience with this? Could it be that if I have fewer pieces of fish (the recipe calls for 10-12 pieces), it should cook less?

Hi. The recipe is correct – 45 minutes on a low flame… The cook time shouldn’t adjust if you have less fish but you can alway check it after 30 minute of it simmering.
