frozen pizza dough, defrosted
3–4 cups leftover sweet potato casserole
mini marshmallows
2 eggs, beaten
granulated sugar
Preheat oven to 350 degrees Fahrenheit. Line two baking sheets with Gefen Parchment Paper and set aside.
Roll out the pizza dough. Using a two- and- a- half-inch (six-centimeter) cookie cutter or a glass, cut out circles of dough.
Place one tablespoon of the potato mixture on each circle and top with two to three mini marshmallows. Carefully close up each circle to form a ball and place on the prepared baking sheet.
Brush with egg and sprinkle with sugar and cinnamon. Bake for 15–25 minutes or until golden.
Remove from oven and allow to cool. Serve warm or at room temperature.
Yields 36 rolls
