4 and 1/2 cups, peeled shredded sweet potatoes (from 2 sweet potatoes, total about 1 and 1/4 pounds)
4 ounces cream cheese, room temperature
3 large eggs
1/4 cup milk
1/3 cup plain yogurt
1/2 cup granulated sugar
3/4 cup crushed graham crackers
2 tablespoons light brown sugar
1/4 teaspoon ground cinnamon
2 tablespoons salted butter, melted
Preheat oven to 350 degrees Fahrenheit. Butter an eight by eight inch baking dish.
In a blender, blend together cream cheese, eggs, milk, yogurt and granulated sugar until smooth. Transfer the mixture into a large bowl. Add sweet potatoes to the bowl and mix to combine.
Transfer the sweet potato mixture into the prepared baking dish, cover the top with aluminum foil tightly and bake in the oven for 45 minutes.
In another bowl, mix together graham crackers, brown sugar, cinnamon and butter.
After 45 minutes, remove the baking dish from the oven, uncover and spread the graham cracker mixture over the top evenly. Return the baking dish into the oven, uncover, and bake for another 15 minutes or until the mixture is set and top is golden brown.
Remove the baking dish from the oven and let cool for 10-15 minutes.
