Ingredients (14)

Spicy Peanut Dipping Sauce

Start Cooking

Prepare the Latkes

  1. Pat dry the shredded sweet potatoes to absorb as much moisture as possible.

  2. Add all ingredients into a large bowl and stir until they’re all incorporated.

  3. Pour just under an inch of oil into a wide shallow pan and heat on a medium flame until feels warm when you wave your hand over the pan.

  4. Spoon the mixture into the hot oil and fry the latkes about a minute on each side. Serve warm.

Note:

 

Latkes can be reheated in the oven at about 225°F/110°C.


Fried latkes can be stored in the freezer. Leave to defrost before reheating.

Prepare the Dipping Sauce

  1. Mix all ingredients and serve on the side of the warm latkes.
