I love love a good chicken marinade! Nothing says summer like a delicious grilled chicken on a skewer. These tahini marinated chickens won’t disappoint! I was rummaging around my fridge trying to figure out what I can use as a marinade, and I saw a bottle of tahini and this whole idea came to fruition! The flavors are so vibrant! So intense!
2 and 1/2 pounds chicken cutlets
1/2 cup Haddar Tahini
1/4 cup water
juice of 1/2 lemon (about 1 tablespoon) plus zest
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cumin
2 sprigs fresh parsley or 1 teaspoon dried
2 cloves garlic
Slice the cutlets into long thin strips about one and a half inches wide and set aside.
Place the rest of the ingredients in a food processor and blend until smooth.
Pour the marinade over the chicken and let marinate for about 30 minutes.
(Optional: Thread skewers through the chicken pieces.) Preheat your grill and grill on each side approximately three minutes or until done. Best served fresh.

You need to increase the fat level to make this keto appropriate. The tahnini is a step in the right direction, but there still isn’t enough. To be Keto, the nutritional ratios should be 70-80% fat, 10-20% protein and 5-10% carbs. This recipe, like the others listed, is far too low in fat.
