This recipe is from the Mehadrin Shavuos Cookbook.
1 package large rectangular pizza crust (2 count)
1 sweet potato, sliced with a mandolin
honey, for drizzling
1/2 teaspoon cinnamon
2 red peppers, sliced
1 purple onion, sliced
oil
salt
8 ounces J&J Whipped Cream Cheese
8 ounces Mehadrin Feta Cheese
1/2 cup walnuts
Preheat oven to 425 degrees Fahrenheit. Line two cookie sheets with baking paper.
Arrange the sliced sweet potato on one of the cookie sheets, sprinkle with cinnamon, and drizzle with honey. Spread the peppers and purple onion on the other cookie sheet and sprinkle with salt. Generously spray all veggies with oil.
Roast for 15 minutes.
Meanwhile, smear the pizza crusts with cream cheese. Layer with shredded mozzarella cheese, roasted vegetables, crumbled feta cheese, and top with walnuts.
Transfer to the oven and bake for 15 minutes.
Drizzle with honey and serve hot.
