Tomato-Feta Pasta Salad

Ingredients

Salad

  • 8 ounces Gefen Orzo, cooked according to package directions

  • 2 scallions, sliced

  • 2 cups cherry tomatoes, halved

  • 1/2 cup good quality feta cheese (such as Ta’amti), crumbled

  • 1 avocado, diced

Dressing

  • 1/2 to 1 tablespoon kosher salt (to taste)

  • 1/8 teaspoon freshly ground black pepper

Directions

1.

Place orzo in a bowl. Whisk dressing ingredients together and pour on top of orzo. Add scallions, tomatoes, and feta and mix. Add avocado right before serving to prevent browning.
