6 ounces fresh Bluefin tuna, cut into small chunks
1 teaspoon scallions, finely diced
1/2 avocado, diced, for serving
3 pieces Tuscanini Roasted Chestnuts with Salt and Pepper, chopped
zest of 1/2 lime
mini cucumbers, diced
mini gherkins, diced
1 pouch Haddar Sweet with a Kick Horseradish Pickle Chips, chopped
1 tablespoon diced mango
1 tablespoon capers
1 teaspoon Haddar Soy Sauce
1 teaspoon Gefen Sesame Oil
1 teaspoon Gefen Sesame Seeds
pinch of salt (to taste)
1 tablespoon mayonnaise, recipe below
thinly sliced red radish, for garnish
Tuscanini Parchment Crackers, for serving
pinch of pepper (to taste)
2 egg yolks
1/2 teaspoon Gefen Vinegar
1 teaspoon Haddar Dijon Mustard
3/4 cup Tuscanini Olive Oil
pinch of salt
squeeze of lemon juice
In a large bowl, toss all the ingredients.
Place the avocado in the middle of a serving plate. Lay the tartare over the dice avocado and top with mini sliced red radish.
Serve with Tuscanini Parchment Crackers and a chilled glass of Baron Herzog Chardonnay.
In a large bowl, combine the egg yolks, vinegar, and Dijon mustard. Whisk until fully incorporated.
Whisking constantly, very slowly drizzle in the olive oil until the mixture is emulsified.
Season with salt to taste and a squeeze of lemon juice.
