These mini quiches with chopped turkey filling are an easy decadent starter or buffet option. Onions and squash are briefly sautéed and combined with fresh sage, smoked turkey slices, and your favorite non-dairy creamer, then baked in mini pie shells.
1 onion
2 large eggs
1 green zucchini
1 yellow zucchini
fresh sage
1/4 cup non-dairy creamer
1/2 teaspoon salt
4 slices Tirat Zvi Smoked Turkey Breast, cut into very small pieces.
1 package mini pie shells
Place pie shells on a flat pan and bake for 10 minutes at 350 degrees Fahrenheit or until golden. Remove and set aside.
Finely chop onion, zucchini and sage into very small pieces.
Saute onions in a pan until translucent. Add zucchini and continue sauteing until mixture is softened.
Remove from fire and add the rest of the ingredients.
Fill the pie shells with mixture and bake at 350 degrees Fahrenheit for 20–25 minutes.
