6 veal chops
1 large onion, sliced
2 cups uncooked brown rice
2 cups chicken stock or 2 cups water plus 2 tbsp chicken consommé
Salt and pepper
Turn on broiler. Place onions onto bottom of roasting pan. Place veal chops on top of onions. Sprinkle with salt and pepper. Broil for 5 minutes on each side or until brown.
Remove chops from pan and pour rice on top of pan drippings and onions. Pour broth (or water and consommé mix on top of rice). Return veal chops to pan on top of rice.
Cover and bake at 400 F for an hour, uncover for 30 min more or until rice is fully cooked.
