Veggie-Oat Soup

Ingredients

Main ingredients

  • 1 onion

  • 1/4 knob celery

  • 2 cloves garlic or 2 cubes Gefen Frozen Garlic

  • 2 large carrots

  • 1 large zucchini

  • 1/2 cup oats, blended

  • 1 and 3/4 quarts water

  • 1 tablespoon beef-flavored soup mix

  • 1 teaspoon salt

Directions

Make the Soup

1.

Chop all vegetables.

2.

In a six-quart pot, sauté vegetables in oil for 45 minutes, stirring occasionally.

3.

Add remaining ingredients, bring to a boil.  Simmer for one hour.

Notes:

Freezes very well.
