Oats contain fiber and antioxidents, may help lower cholesterol, and contain other health benefits, but those who prefer their food savory over sweet may come to overlook oats in their kitchens, since oats are often paired with fruits, sugar, and cream. This recipe puts oats back on the table. Oat soups are not only delicious and satisfying, but also score high on the health meter.
1 onion
1/4 knob celery
2 cloves garlic or 2 cubes Gefen Frozen Garlic
2 large carrots
1 large zucchini
1/2 cup oats, blended
1 and 3/4 quarts water
1 tablespoon beef-flavored soup mix
1 teaspoon salt
Chop all vegetables.
In a six-quart pot, sauté vegetables in oil for 45 minutes, stirring occasionally.
Add remaining ingredients, bring to a boil. Simmer for one hour.
