Diets I adapted my never-fail cheese latke recipe into an easy, scrumptious waffle that’s sure to delight. Drizzled with caramel syrup, the waffles present like a dessert but contain the components of a healthy supper option; the perfect idea for a festive Chanukah dinner with your loved ones! Yields about 1 dozen large waffles (depending on the size of your waffle maker)
2 eggs
2 cups flour (I used half Shibolim Whole Wheat, half white)
1 cup sugar
1 tablespoon Gefen Vanilla Sugar
2 pounds (900 grams) cottage cheese
2 tablespoons oil, such as Manischewitz Grapeseed Oil
1 and 1/2 cups blueberries
1 and 1/2 cups diced frozen strawberries
caramel syrup or maple syrup (optional)
Place the eggs, flour, sugars, and cottage cheese in a large bowl and blend with a hand blender until smooth.
Heat a waffle maker and spray well with cooking spray. Ladle the waffle batter onto the hot griddle and sprinkle with some berries (either a combination or each type separately). Ladle on a little more batter to cover the berries.
Bake waffles according to waffle-maker directions. Continue to prepare waffles until all the batter is used up. Serve warm with caramel syrup or maple syrup, if desired.
