This multi-step recipe is well worth the effort! This wellington chicken is packed with flavor and is a full meal in one! Your guests will love the presentation and great taste!
1/2 package pastry dough
1 onion, diced
1 and 1/2 tablespoons oil
10 ounces mushrooms, chopped
1/3 cup Gefen Bread Crumbs
1 pound chicken cutlets, pounded to flatten
1/2 pound broccoli, cooked and drained
1/4 teaspoon salt
dash of pepper
1 egg
1/4 cup Gefen Mayonnaise
Roll out dough. Cut into four-inch squares.
Sauté onions in oil. Add mushrooms and cook for five minutes. Add bread crumbs and mix well. Set aside.
Cut chicken cutlets in half, set aside.
Combine broccoli and remaining ingredients. Set aside.
To assemble: Place one tablespoon mushroom filling onto each square of dough. Place piece of cutlet onto mushrooms. Place one tablespoon broccoli filling over cutlet. Bring four corners of dough towards center, pinch to seal firmly. Place seam-side down onto pan.
Brush with egg yolk. Bake at 400 degrees Fahrenheit for 45 minutes or until golden brown.
Serve with Mushroom Sauce or Celery Sauce.
