Whipped brie is a delicious light, airy, and quick appetizer that’s trending right now. You’ll love this version with Strawberry Balsamic Compote. We’ve even included a bonus recipe for turning your extra rinds into a crispy-on-the-outside, chewy-on-the-inside treat.
2 wheels of Brie cheese, rind removed
1 cup strawberries, sliced
1/4 cup sugar
2 tablespoons Bartenura Balsamic Vinegar
a pinch of salt
a couple grinds of Gefen Black Pepper
leaves of 2 to 3 sprigs thyme
olive oil to drizzle
toasts or crackers, for serving
In a food processor fitted with an S blade, blend the Brie until smooth.
Spread over a plate or board.
In a pan over medium heat, add the strawberries. Soften for about two to three minutes. Add the sugar and balsamic vinegar and stir until dissolved. Add salt, pepper, and thyme to taste.
Spoon over Brie and sprinkle with a little of the Brie, salt, and a drizzle of olive oil.
Serve with warm toasts or your favorite crackers.
