Throughout this past year, my daughter would come home from school and tell me about the healthy (jumbo-sized) cookie that one of her friends would bring for lunch all the time. “Can you please get the recipe???” I called her friend’s mom, Chanie G., who happens to have a repertoire of healthy dishes and baked goods. This cookie is wholesome…yet fantastic! Even without flour! Instead it utilizes wheat germ to hold it together, which is the embryo of wheat and packed with loads of protein. My family keeps going back to the cookie jar.
3/4 cup Gefen Applesauce
1/2 cup oil
1 and 1/2 cups brown sugar
1/2 cup sugar (or Xylitol or Splenda) or 1/2 cup + 1/6 cup Health Garden Allulose
2 eggs plus 2 egg whites
2 teaspoons Gefen Vanilla Extract
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 and 1/4 cups wheat germ
1 cup apple juice
6 cups quick cooking oats
1 cup Glicks Chocolate Chips
Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with Gefen Parchment Paper.
In a large bowl, combine applesauce, oil, sugars, eggs, egg whites, and vanilla. Add in baking powder, baking soda, salt, wheat germ, apple juice, and oats. Stir in chocolate chips. Let batter sit for five to 10 minutes to let the consistency thicken (this is a very moist cookie dough).
Once slightly thickened, shape the dough into balls. Press balls onto prepared baking sheet. Bake for 16 minutes.
Yield: 30 large cookies
