Diets This recipe is a great side dish for a Yom Tov seuda or simcha.
3 eggs
1 cup oil
1 and 3/4 cups sugar
3 cups grated and drained (about 3 large) zucchini
3 teaspoons Gefen Vanilla Extract
2 cups flour
1 and 3/4 teaspoons Gefen Baking Soda
2 teaspoons cinnamon
1/4 teaspoon Haddar Baking Powder
Mix first five ingredients by hand. In a separate bowl, combine dry ingredients. Then combine liquid and dry ingredients, mixing gently.
Fill muffin tins or tart shells three-fourths full. Bake at 350 degrees Fahrenheit for 45 to 55 minutes. Remove from pans when done.
