Zucchini Muffins or Tarts


This recipe is a great side dish for a Yom Tov seuda or simcha.


Prepare the Muffins

1. Mix first five ingredients by hand. In a separate bowl, combine dry ingredients. Then combine liquid and dry ingredients, mixing gently.
2. Fill muffin tins or tart shells three-fourths full. Bake at 350 degrees Fahrenheit for 45 to 55 minutes. Remove from pans when done.


You may substitute 1/2 cup unsweetened applesauce for half the oil.
