Ratatouille: The Side Dish that Goes with Everything

Serve hot or cold, with meat or dairy, and with pretty much any protein—this is a versatile, low carb side dish can also be made days in advance, making your prep that much easier!

Get the recipe: 
 2 yellow zucchini
 2 green zucchini
 1 small eggplant
 2 purple onions
 6 ounces shiitake mushrooms
 2 tablespoons balsamic vinegar
 1 and 1/2 tablespoons olive oil
 2 cloves garlic
 1 teaspoon Dijon mustard
 2-3 teaspoons sea salt
 1/2 - 1 teaspoon pepper 
 1 jar Tuscanini Crushed Tomatoes
