You probably have a chicken soup routine you follow every week — but this recipe is worth trying. Yussi’s version is golden, clear, layered with flavor, and includes a vegetable that might surprise you!
Get the recipe:
Chicken Soup
6 carrots, peeled
1 parsnips, peeled
1 celery root, cut in half
1 green squash (zucchini)
2 tomatoes
1 red bell pepper
4 stalks celery
1 large onion, peeled
10 cloves garlic, peeled
1 kohlrabi, peeled
1 pound chicken gizzards (optional but highly recommended for depth of flavor)
3 tablespoons kosher salt (adjust to taste)
1/2 tablespoon black pepper (optional)
a handful each fresh parsley and fresh dill (tie together or place in mesh bag)
4–5 chicken legs (skin-on, bone-in)
water to fill pot and cover ingredients

Hilchos Shabbos reminder – you are not allowed to add fresh herbs (like dill or parsley) to hot chicken soup on Shabbos!
Cooking ideas:
You can put the chicken itself in the same kind of net bag to make it easier to take out when the soup is ready
I leave my onions whole so they do not fall apart in the soup. They do not give as much flavor when they are whole, but one of my kids likes to eat it like that
I would advise you to peel your celery… it makes it so much better and easier to chew
Have you ever tried adding thyme or bay leaf?
