In this episode of GLATT, we sit down with iconic Israeli chef Eyal Shani to explore how his passion for vegetables, presence, and poetry in the kitchen built a global culinary empire—from Jerusalem to Michelin-starred New York. Shani reflects on his journey from street food to fine dining, the balance between creativity and business, and his emotional embrace of kosher cuisine through restaurants like Miznon and Malka. With every tomato, scallion, and soul-stirring answer, Shani reminds us that food is far more than sustenance — it’s storytelling.

I am deeply disappointed that the KOSHER.com episode hosted a guest that openly talks about eating non kosher foods (Porcupines!!) and portray him as a celebrity. This does not align with what KOSHER.com should stand for.

I agree.
