when hot liquids come in direct contact to any raw protein (fish,meat,chicken ect. ) it causes bacteria…
That’s actually not correct. You will be grilling anyways over 140 degrees, which kills bacteria. What causes bacterial growth is leaving food out at the danger zone temp of 40-140 degrees.
To prevent bacteria, keep hot food hot and cold food cold.

she also says to cool the sauce/marinade also even if the marinade and the chicken cook to the safe point where the bacteria cooks out – all the utensils ( pastry brush, bowl of marinade ) before getting cooked out is just spreading bacteria…
