Esty Wolbe is making dinner easy (and sneaky) with her Hidden Veggie Meatball Soup! It’s hearty, cozy, and packed with vegetables your kids won’t even know they’re eating.
Get the recipe:
Soup
2 tablespoons oil
1Â onion, diced
2 stalks celery, sliced
3 cloves garlic, chopped
salt, to taste
pepper, to taste
2 teaspoons Italian seasoning
1 teaspoon garlic powder
2 tablespoons Tuscanini Tomato Paste
28 ounces canned diced tomatoes, such as Tuscanini, not drained
1 bag Beleaves Sliced Zucchini
1 bag Beleaves Carrot Sticks
48 ounces (6 cups)Â beef, chicken or veggie broth
mini meatballs (recipe below)
1/2 box rotini or cavatappi pasta
2 cups baby spinach

looks good! you can make the meatballs gluten-free. I make them without any binder and they hold together just fine!
