Once your kitchen’s turned over for Pesach, this is the supper you'll keep coming back to—especially during Chol Hamoed. Esty's making crispy chicken over a bed of golden sautéed onions, and yes, it is as good as it sounds.

Potato Chip Chicken over Onions
3 large Spanish onions, sliced
3 tablespoons oil, such as Gefen Cottonseed Oil
salt, to taste
pepper, to taste
2 and 1/2 pounds thin chicken cutlets
3 tablespoons Gefen Mayo
2 large bags Lays Potato Chips, crushed
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon paprika

I prepped this before Yom Tov and froze it raw on the pan, ready to pop into the oven. I took it out last night. When we came home from our trip, popped it into the oven and we had a super quick fresh hot supper. It is completely gone. Even my picky eaters ate it up.
