Thanks for asking! The mashgiach is always the one to turn on the flame and the chefs adjust them as needed throughout the day. If a flame ever goes out or needs lighting—even a hand flame for caramelizing sugars on desserts—the mashgiach handles it. For the flow of the show, some of that behind-the-scenes work isn’t shown, but Tierra Sur follows all kashrut rules strictly. Hope that clears it up!
