Looks so yummy is it just dough balls or does it somehow give the boba popping in your mouth and the liquid comes out texture

Good question!!
Popping boba is a little different. It’s made by dropping fruit juice mixed with a chemical sodium alginate into a solution mixed with calcium chloride. It creates a sphere with the liquid trapped inside. This is a relatively newer kind of way to make boba. The original way to make boba like we show here originated in Taiwan and is just chewy tapioca balls, similar to a mochi texture and it isn’t filled with anything but it tastes sweet because it’s boiled in the brown sugar syrup. The first kind of boba you can find fairly easily in some kosher grocery stores or online purveyors but the tapioca pearls are super hard to find kosher for some reason, so we made them!
