We've all had those days. You get home late. The kids are asking
what dinner is for the 4th time. All the dishes are in the dishwasher
you forgot to run. Well, luckily this one only requires one pot! It's
sweet, tangy, and has healthy vegetables in every bite. You literally
just put all the ingredients in and let them cook into something super
tasty that will have everyone going for seconds.
One-Pot Teriyaki Chicken and Rice
Recipe by Chavi Feldman
Serves 6-8
2 Tbsp oil
4 chicken breasts (about 2½ lb or 1¼ kg), diced into 1½-inch (4-cm)
squares
salt and pepper, to taste
4 cloves garlic, minced
1½ cups water
1 cup white rice, rinsed
¼ tsp dried ginger or 1 cube Dorot Gardens Frozen Ginger
¼ cup Gefen Soy Sauce
2 Tbsp rice vinegar
½ cup Gefen Honey
1½ Tbsp hot sauce (or to taste)
3–4 cups frozen broccoli florets, thawed
1 cup sliced baby carrots
1 red pepper, diced
10 oz (280 g) baby bella mushrooms, cleaned and sliced
3 Tbsp cornstarch roasted and salted cashews, for garnish (optional)

This recipe looks so delicious! How can I adapt it to work with brown rice?
Hi Elky, I would adjust the cooking time to about double what you would do with white rice, but keep an eye on it throughout just to make sure! It may need a little less/more time. Enjoy this amazing recipe! -Chana Tzirel from Kosher.com
